Here’s a tasty dish…it doesn’t have a name yet…it’s loosely based on something trad. Portuguese:
Pork fillet cut into small cubes [or neck-end of loin is best]
Onion & garlic
Paprika
Red wine
Masses of fresh coriander
Olive oil, salt, bayleaf
Sweat onion & garlic in a little oil. Sprinkle pork with paprika & lightly brown in a little oil. Then put both together in a saucepan or casserole. Season, add a glug of wine, bayleaf then cover with water. Simmer till pork is tender and just about all the liquid has disappeared. Add coriander leaves/stalks roughly chopped, and a glug of olive oil. Cook for a further 5 mins.
Serve with rice, mashed potato………….
